In honor of our matriarch, Nancy Aldrich, who ran Polly's from the 1960's through to the early 2000's we are sharing one of her own recipes. Nancy passed away on Dec 15th, 2016- but her memory will live on through all of us here at Polly's. We hope you enjoy this delicious cookie and make them with as much love as Nancy would have.
Ingredients:
1 Cup of Polly's Granulated Maple Sugar
1 Cup Butter
2 Eggs
1/2 tsp of baking soda
1/4 cup water
2 cups quick cooking oats
2 cups shredded coconut
1 cup chocolate chips
(1 cup chopped nuts if desired)
1 3/4 cup white flour
1 tsp baking powder
Preheat oven to 400 degrees F. Cream together the butter, sugar, and eggs.
In a separate bowl combine water, oats and baking soda. Add to the butter and sugar mixture.
Once combined, add and mix in the rest of the ingredients.
It should be a thick mixture. Spoon onto a parchment lined baking sheet. Bake at 400 degrees F for 10-12 minutes.
Move to a cooling rack, and enjoy!
